Nonna’s Yummy Pancakes

What’s nice is that it’s less expensive and better for you. You’ll also find this recipe in my book, Baby Bites: Transforming a Picky Eater into a Healthy Eater.
In a mixing bowl, add
1 cup whole-wheat pastry flour
2 teaspoons baking powder (I live at a high altitude, so I always adjust the baking powder down to 1 teaspoon.)
½ teaspoon of salt.
In a smaller bowl, add:
1 tablespoon honey
2 eggs
2 tablespoons coconut oil
about 1 cup milk (add more milk for thinner pancakes).
Then add the wet ingredients to the dry and mix together.
1) Melt a pat of butter or coconut oil on a hot griddle and spoon pancake batter onto the griddle.
2) After bubbles appear on the surface of the batter, turn the pancakes once and cook until light brown.
3) Serve with butter and fruit-only jelly or pure maple syrup. (My husband’s favorite topping is 100% applesauce.)
