Scalloped Corn for a Crowd

1 medium chopped onion
2 shredded carrots
¼ cup olive oil
6 cups corn (I use frozen organic corn)
1½ cups milk
1½ cups shredded cheddar cheese
3 tablespoons flour (or corn starch or arrowroot powder)
2 slightly beaten eggs
½ teaspoon salt

Method:
1. Grease a baking dish and set aside.

2. In a medium pan combine the pepper, onion, carrot and olive oil. Sauté for about 10 minutes.

3. In a large mixing bowl stir together the corn, milk, flour, and 1 cup of the cheese, and eggs. Stir in the cooked vegetables. Transfer mixture to your prepared baking dish.

4. Bake uncovered in 325 degree over for 45 minutes, or until the center is set. Sprinkle with the rest of the cheese.
