1 medium chopped onion<br />
2 shredded carrots<br />
¼ cup olive oil<br />
6 cups corn (I use frozen organic corn)<br />
1½ cups milk<br />
1½ cups shredded cheddar cheese<br />
3 tablespoons flour (or corn starch or arrowroot powder)<br />
2 slightly beaten eggs<br />
½ teaspoon salt</p>
<p>Method:<br />
1. Grease a baking dish and set aside.</p>
<p>2. In a medium pan combine the pepper, onion, carrot and olive oil. Sauté for about 10 minutes.</p>
<p>3. In a large mixing bowl stir together the corn, milk, flour, and 1 cup of the cheese, and eggs. Stir in the cooked vegetables. Transfer mixture to your prepared baking dish.</p>
<p>4. Bake uncovered in 325 degree over for 45 minutes, or until the center is set. Sprinkle with the rest of the cheese.</p>
